This is delicious, Belgian couverture chocolate, not to be confused with compound cooking chocolate, and made to higher quality European standards. We offer a very special brand of couverture chocolate, made by Callebaut. Select from dark (dairy free), milk or white (caffeine free) chocolate.
What is couverture chocolate?
Couverture chocolate is a very high quality chocolate that contains a very high proportion of cocoa butter (32-39%) to other mainstream chocolates. This higher level of cocoa butter makes it ideal for pouring into chocolate fountains as it does not solidify or seize redily as a compound chocolate would. The extra cocoa butter also gives the chocolate a better sheen, firmer "snap" when broken, & a creamier flavour.
Our cake decorators love it for tempering & other cake decorating dressings as it is so lovely to work with, more reliable, and does NOT need oil when melting as would compound chocolate.
Always stir your chocolate while melting, and do not allow couverture chocolate to heat to above 55deg.
